Grown on small, family-owned farms in the Kintamani highlands, the coffee thrives in the volcanic soil of Mount Agung, often sharing the land with citrus groves.
The secret to its color and character lies in wet-hulling. Unlike other methods, Giling Basah involves stripping the bean of its protective parchment layer while it is still wet. As the exposed bean dries on open-air patios, it takes on its beautiful and distinctive blue hue.
The farming practices are deeply rooted in Balinese culture. Producers are organized around the Subak Abian, an ecologically sustainable irrigation system over a millennium old.
